Course Information for Students

An excellent progression in the world of catering if you don’t want to be an apprentice you can take the diploma only route. This can be paid via a student loan or via invoice. 

You will need to be working in a level three position as this is not just cooking it is also supervising staff and ensure all resources are available for preparation, cooking and service.

During the course you will be supported and assessed by one of our competent assessors.

An example of what you will be studying, preparing and cooking are;

Unit sample:

Mandatory 

  • Develop productive working relationships with colleagues (9)
  • Maintain food safety when storing, preparing and cooking food (4)
  • Maintain the health, hygiene, safety and security of the working environment (4)

Optional units sample 

  • Prepare shellfish for complex dishes (4)
  • Prepare cook and finish fresh pasta dishes (4)
  • Prepare, cook and finish complex cakes, sponges, biscuits and scones (5)
  • Produce healthier dishes (3)
  • Contribute to the control of resources (4)
  • Contribute to the development of recipes and menus (4)

You will have a choice of what units that you want to specialise in guided by your own career objectives, menus within your organisation and within the unit credit system (this will be explained by the assessor)

Completion of a level two professional cookery qualification or direct entry is also possible for those with significant industry experience.

On the job 

Theory can be accessed at college, but this is not mandatory but may be beneficial. This is on a Wednesday but your tutor will discuss times with you.
